There are stories that unfold slowly, amidst the mountains, following the rhythm of the seasons, the pace of grazing animals, and the time it takes for things done well to take shape. This is how the story of the Colaciello family began. In Frosolone, in the heart of Molise, where tradition is not merely a concept to be recounted, but a way of life.
Knowledge passed down through the generations
For generations, the Colaciello family has safeguarded a precious heritage: the art of cheese-making in Molise.
This knowledge has not been acquired from books, but has been passed down through gestures, observation and patience. From great-grandparents to grandparents, from parents to children, in a quiet yet continuous passing of the torch. In 1995, this heritage passed into the hands of Antonio Colaciello, who took up the mantle from his father Angelo. It was a delicate moment, marked by illness, but also by an iron will: not to let that work, built through sacrifice, be lost.
His wish was clear: to pass on a craft rooted in respect. For milk. For the land. For people.

From that moment on, a conviction became their guiding principle: nothing in the family’s history could ever be mass-produced.
